White Chia Cinnamon Raisin Muffins

Suncore Foods® White Chia Seeds, oatmeal, cinnamon, vanilla, and raisins team up to give you the fuel to tackle your day whether it's at the start or near the middle for that extra push to the finish line. Ingredients

1½ cups gluten-free 1-to1 flour
1 cup gluten-free rolled oats
1½ – 2 tsp ground cinnamon
¾ tsp baking soda
1 cup brown sugar
⅓ + 1 cup unsweetened vanilla oat milk
⅓ cup melted vegan butter
2 tsp pure vanilla extract
1¼ tsp apple cider vinegar
⅓ cup Suncore Foods® White Chia Seeds
¾ cup seedless raisins

Directions

1. Preheat oven to 350°F and line a cupcake/muffin tray with muffin liners.
2. In a large bowl, combine flour, oats, cinnamon, baking soda and brown sugar. Mix in milk, butter, vanilla extract and apple cider vinegar.
3. Fold in chia seeds and set aside for 5 minutes. Mix in raisins and scoop batter into muffin liners, filling two-thirds of each cavity.
4. Bake for 22-25 minutes or until the muffins pass the toothpick test.
