Blueberry Ebony Carrot Bars

These are our go-to anytime treat and we cannot wait to take a bite of these No Bake Blueberry Ebony Carrot Bars! Looking at how flawless these creamy bars are, they will definitely make your tastebuds happy. We love how our Suncore Foods® Indigo Blueberry Powder & Suncore Foods® Ebony Carrot Powder, introducing striking purples along with magnificent flavors. Being the perfect bite sized snack, don't mind us if we eat more than one! 

Ingredients

Makes 9 Bars

Base:
130g favorite homemade or store bought biscuit/cracker crumbles
65g melted dairy free butter or coconut milk

Vanilla Layer:
1 1/2 cups coconut milk
1/4 cup maple syrup
2 tsp vanilla extract
1 tsp agar agar powder

Blueberry layer:
1 cup blueberries
1/3 cup water
1/4 cup maple syrup
1 cup coconut milk
2 tsp Suncore Foods® Indigo Blueberry Powder
1/4 tsp Suncore Foods® Ebony Carrot Powder
1 tsp agar agar powder

Directions

1. Line an 6" square baking pan with parchment paper. Set aside. In medium bowl, combine base ingredients and firmly press mixture into the a prepared pan. Refrigerate until firm.

2. In a saucepan, bring coconut milk to a boil. Add in agar powder stirring constantly until dissolved. Lower the heat, whisk in vanilla and maple syrup, let simmer for 1 min. Pour mixture over the base. Transfer to the fridge to set.

3. Combine berries, water, and maple syrup in a saucepan bring mixture to a boil. Turn the heat down and continue to simmer for few minutes. Strain mixture through a fine mesh sieve. Use the back of a spoon to press out the juice. In a saucepan, bring coconut milk, berry syrup to a boil. Add in agar powder, Suncore Foods® Indigo Blueberry Powder & Suncore Foods® Ebony Carrot Powder, stirring constantly until dissolved. Lower the heat and let simmer for 1 min. Pour mixture over the vanilla layer and refrigerate until set.
