Creamy Lemon Quinoa

Who else wants to try a bowl of Creamy Lemon Quinoa? With savory and zesty flavors all in one place, this bowl satisfies all of your foodie needs. Incorporated our Suncore Foods® Quinoa Pearl Seeds and Suncore Foods® Rose Salt to make this scrumptious creamy bowl! Have this for breakfast or any time of the day, the recipe is yours for the taking! 


Serves 3:
1 large onion, diced
3 cloves garlic, minced
1 tsp dried thyme
1/2 tsp ground sage
3/4 tsp Suncore Foods® Rose Salt
1/2 tsp black pepper
1 cup Suncore Foods® Quinoa Pearl Seeds
2 cups water or vegetable broth
2-3 zucchinis, grated
1 1/2 cups cooked chickpeas
3 tbsp nutritional yeast
Juice and zest of 1 lemon
3 tbsp tahini


1. In a large pot, heat some oil and saute the onion and garlic for 5 minutes. Add in herbs, salt and pepper.

2. Once fragrant, stir in quinoa and water, and bring to a boil over medium heat. Cover and reduce the heat. After 8 minutes, stir in zucchini and chickpeas, then cover again for 8-10 minutes -- or until quinoa is cooked through.

3. Stir in nutritional yeast, lemon juice and zest, and tahini. Serve warm!
