Creamy Lemon Quinoa

Ingredients
Serves 3 Bowls
1 large onion, diced
3 cloves garlic, minced
1 tsp dried thyme
1/2 tsp ground sage
3/4 tsp salt
1/2 tsp black pepper
1 cup Suncore Foods® Snow Quinoa Flakes
2 cups water or vegetable broth
2-3 zucchinis, grated
1 1/2 cups cooked chickpeas
3 tbsp nutritional yeast
Juice and zest of 1 lemon
3 tbsp tahini
Directions
1. In a large pot, heat some oil and sauté the onion and garlic for 5 minutes. Add in herbs, salt and pepper.
2. Once fragrant, stir in Suncore Foods® Snow Quinoa Flakes and water, and bring to a boil over medium heat. Cover and reduce the heat. After 8 minutes, stir in zucchini and chickpeas, then cover again for 8-10 minutes -- or until quinoa is cooked through.
3. Stir in nutritional yeast, lemon juice and zest, and tahini. Serve warm!
