Blood Orange Yogurt Cake with Blood Orange Red Beet Pink Pitaya Glaze

Ingredients

Makes A Small 17cm x 8 cm Loaf, Double the Recipe for A Regular 1 Pound Loaf Pan

Dry Ingredients:
1 1/8 cups (135g) cake flour or all purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt

Wet Ingredients:
1/4 cup & 2 tbsp (93g) dairy free yogurt
1/4 cup & 2 tbsp (90g) freshly squeezed blood orange juice
1/2 cup sugar (100g) of choice
1/4 cup (55g) melted dairy free butter or coconut oil
Zest of 1 blood orange

Glaze:
1 cup (110g) icing sugar
3-4 tbsp blood orange juice
2 tsp Suncore Foods® Pink Pitaya Powder
1 tsp Suncore Foods® Red Beet Powder

Directions

1. Preheat oven to 180c. Greased the loaf pan and set aside.
In a mixing bowl, sift flour, baking powder, baking soda, salt and mix well.


2. In a separate bowl combine juice, orange zest, melted butter, yogurt and sugar. Add wet ingredients into dry and mix until smooth. Pour batter into a greased loaf pan.

3. Bake for 50-55 minutes or until a butter knife through the center and comes out clean.
Let the cake cool for about 10 minutes in the pan, then turn the cake out onto a plate.

4. To Make the Glaze — Whisk all ingredients in a small bowl until nice and smooth. Add a little more juice if you prefer a runny glaze or a little more confectioner sugar if you prefer a thicker glaze.
