Makes 10 Small Popsicles
110g coconut milk
25g Suncore Foods® Black Chia Seeds
5g pure vanilla extract
15 + 25g maple syrup (or to taste)
255g fresh pineapple
105g coconut cream
10g Suncore Foods® Marigold Passion Fruit Powder & Seeds
5g Suncore Foods® Cerise Prickly Pear Powder
1. Chia mixture – Combine coconut milk, Suncore Foods® Black Chia Seeds, vanilla extract and 15 g maple syrup. Set aside for 15 minutes until chia seeds activate.
2. Passion Fruit mixture – Place all remaining ingredients, except Suncore Foods® Cerise Prickly Pear Powder, in a blender and blend until creamy and well combined. Remove half the mixture and set aside.
3. Cerise Prickly Pear mixture – Add Suncore Foods® Cerise Prickly Pear Powder to the remaining mixture in the blender and blend until well combined.
4. Assemble Popsicles – Add equal amounts of each mixture to popsicle molds and freeze overnight.
