Island Marigold Passion Fruit Tropical Donuts

The sweet taste of the tropics are incorporated and glazed throughout these Island Marigold Passion Fruit Tropical Donuts, taking you to an island on a hot summer day with just one bite. These light & crisp pillows are super easy to make and are absolutely scrumptious summer treats that melt in your mouth instantaneously. Ingredients

Yields 8 Large or 12 Small Donuts

Dry Ingredients for the Donuts:
190g (1 1/2 cups) all purpose flour
2 tsp baking powder
1/4 tsp salt
150g (3/4 cup) caster sugar
2 -3 tsp Suncore Foods® Marigold Passion Fruit Powder & Seeds

Wet Ingredients for the Donuts:
180ml (3/4 cup) plant milk
40g (2 tbsp) unsweetened coconut yogurt
50g (4 tbsp) melted vegan butter, at room temp
1 tsp vanilla bean paste/ extract

For the Watermelon Glaze :
80g (1/2 cup) powdered sugar
1 tbsp + 1 tsp watermelon juice (blend 1 cup of fresh watermelon and pass through a sieve to remove seeds)

For the Passion Fruit Glaze:
80g (1/2 cup) powdered sugar
5 tsp Suncore Foods® Marigold Passion Fruit Powder & Seeds
1 tbsp plant milk

Directions

1. Preheat the oven to 350°F (180°C). Lightly grease donut tray if you're not using non-stick.

2. Whisk the flour, baking powder, salt, Suncore Foods® Marigold Passion Fruit Powder & Seeds and sugar into a large mixing bowl.

3. Add the plant milk, coconut yogurt, melted butter and vanilla and whisk to combine. Don't over-mix.

4. Transfer the donut batter into the mold with a spoon or a piping bag. Bake for 15 minutes until set on top.

5. Remove from the oven and let cool for a few minutes before transferring the donuts to a wire cooling rack.

6. Allow to cool completely before glazing.

7. Whilst the donuts are cooling, make the glaze. Combine powdered sugar, watermelon, Suncore Foods® Marigold Passion Fruit Powder & Seeds, and mix until smooth but thick. Dip the top of each donuts and let set over a rack.
