Vegan Orange Carrot Pound Cake

1 tbsp Suncore Foods® Orange Carrot Supercolor Powder
2¼ cup all purpose flour
1 cup sugar of choice
1½ tsp baking powder
¾ tsp baking soda
¾ cup non dairy yogurt
¾ cup freshly squeezed orange juice
½ cup coconut oil
¼ tsp salt (or Suncore Foods® Rose Salt)
Zest of 1 orange
1. Preheat oven to 180c. Grease the loaf pan and set aside.
2. In a mixing bowl, sift flour. Add supercolor powder, sugar, baking powder, baking soda, salt and mix well.
3. In a separate bowl combine orange juice, orange zest, oil, yogurt. Add wet ingredients into dry and mix until smooth. Pour batter into a greased loaf pan.
4. Bake for 50-55 minutes or until a butter knife through the center and comes out clean. Let the cake cool for about 10 minutes in the pan, then turn the cake out onto a plate.
