Steamed Red Beet Year of the Bunny Buns

The year of Bunny is almost here! Let's celebrate Lunar New Year and welcome the year of rabbit with these stinking adorable Steamed Red Beet Bunny Buns. These squishy, soft delicious buns are irresistible, they are soft and scrumptious! You can turn your steamed buns into these magical bunnies by using Suncore Foods® Red Beet Powder. We wish you a year full of good luck and great health! 

Ingredients

Red Bean Filling:
Red bean paste
1 cup red bean, soaked overnight
3 cups water
1/4 cup sugar of choice

Steamed Buns:
250g all purpose flour
140g milk of choice, cold
3g instant yeast
1 tsp sugar
1/2 tsp Suncore Foods® Red Beet Powder dissolved in 1 tsp water

Directions

1. Steamed Buns — In a large mixing bowl combine all ingredients, cover the bowl and let the dough rest for 15 minutes. Divine dough into 2 (white & pink). Add the dissolved Suncore Foods® Red Beet Powder to 1 portion of dough, knead until well incorporated. Knead the dough for about 10 mins until the dough becomes smooth, elastic, and shiny. Divide each dough into 8 portions, roll into balls and let rest for 10 mins. Flatten the ball with your palm into a circle. Add about 15g of red bean filling in the centre. Gather up the edges to seal and shape into round ball. Shape the dough to rabbit shape. Place buns on parchment paper squares. Cover and set in a warm place to rise for 40 mins.

2. Red Bean Filling — Add water in a pot along with the beans. Cook beans on low until soft (1 hour). Add in sugar and heat over low to cook off extra water until form a paste texture. Keep stirring during the process. Transfer beans paste to a food processor and process until smooth or Smash beans with a spatula. Let it cool completely.

3. Steam buns for 12-15 minutes on low heat. Serve warm. Enjoy!
