Purple Sweet Potato Mini Tarts

With a touch of Suncore Foods® Purple Sweet Potato Supercolor Powder, these tarts luxuriate in an elegant and calming purple hue. It's filled with a creamy and airy mousse that complements the soft crumbliness of the crust. Trust us, it's hard to stop at just one mini-tart! This mousse is a must!

Ingredients

Tart Crust:
12.3 oz flour
1.8 oz almond flour
6.3 oz unsalted butter
2.5 oz egg

Mousse Filling:
8 oz cream cheese
2 cups heavy cream
1/2 cup granulated sugar
3/4 cup confectioners sugar
1 packet gelatine
2 tbsp water
5 tsp Suncore Foods® Purple Sweet Potato Supercolor Powder + 1/4 cup water
Berries for garnish

Directions

1. Place the flour, sugar, and salt in the bowl of a food processor, add butter, and pulse until the mixture resembles coarse meal. Add the eggs until the dough gathers itself into a ball. Wrap the dough tightly in plastic wrap and chill for 1 hour. On a lightly floured surface, roll the dough to a thickness of about 1/8-inch. Press the dough into mini tart pans trimming away any excess. Bake for 15 minutes at 375'F.Cool completely.
2. Mix water with Purple Sweet Potato Safflower Powder until it completely dissolves. Dissolve gelatine in water. In a food processor combine the cream cheese, confectioner's sugar and mix until smooth.Add gelatine and mix. Whip the heavy cream to stiff peaks and fold into the cream cheese mixture.
3. Pour mousse into chilled tart. Refrigerate for at least 2-4 hours, or until completely set. Top with fresh berries.
