Steamed Crystal Cosmos Red Cabbage Dumplings

Ingredients

Filling:
1 large carrot shredded
1 cucumber shredded
1 block firm tofu drained & crumbled
2 cloves garlic minced
1 tsp minced ginger
Pinch of salt

Wrappers:
100g wheat starch
20g tapioca starch
1/4 tsp Suncore Foods® Cosmos Red Cabbage Powder
80-85g hot boiling water

Directions

1. Filling — Sprinkle 2 pinches of salt onto the shredded carrot and cucumber, mix well with your hands. Allow this to sit for minutes. Squeeze out excess water. Set aside. Add 1 tbsp sesame oil into a pan and heat over medium heat until hot. Add the garlic and ginger. Stir a few times to release the fragrance. Add in tofu and cook until slightly golden. Toss in shredded carrot and cucumber.

2. Wrappers — In a large bowl combine wheat starch, tapioca starch and Suncore Foods® Cosmos Red Cabbage Powder. Add hot boiling water to the mixing bowl while stirring with a wooden spoon. When the dough is not too hot to handle, knead the dough for a couple of minutes until it turns into smooth dough ball. Add more potato starch if needed. Divide dough into pieces, work with 1 dough at the time and cover the other dough with cling wrap. Roll out dough with a rolling pin. Place the wrapper over a non-stick surface and cover it with a cling wrap to keep it moist as you work on the rest of dough.

3. Assemble — Place a spoonful of filling in the middle of a wrapper. Wet the edge with water. Begin to fold and seal the dumpling completely. Place dumplings in the steamer and steam over a medium heat for 8 minutes. Serve warm. Enjoy.
