Ingredients

Dark Purple Dinner Rolls:
1 cup warm oat milk (slightly warmer than lukewarm but not hot)
2 tsp sugar
2 tsp dry active yeast
1.5 cups + 2 tbs gluten-free 1-to-1 flour
½ cup tapioca starch
2 tsp Suncore Foods® Cosmos Red Cabbage Powder
½ tsp salt
3 tbsp melted vegan butter (+ more for brushing)

Light Purple Dinner Rolls:
1 cup warm oat milk (slightly warmer than lukewarm but not hot)
2 tsp sugar
2 tsp dry active yeast
1.5 cups + 2 tbs gluten-free 1-to-1 flour
½ cup tapioca starch
1 tsp Suncore Foods® Purple Sweet Potato Powder
1.5 tsp Suncore Foods® Lilac Taro Yam Powder
½ tsp salt
3 tbsp melted vegan butter (+ more for brushing)

Equipment Required:
9” baking/cake pan

Directions

1. Combine warm oat milk, sugar and yeast. Set aside until frothy and double in size, approximately 10-15 minutes.

2. In a large bowl, combine both flours, Suncore Foods® Powder and salt.

3. Once the yeast-milk mixture is ready, add it to the bowl of dry ingredients along with melted butter. Mix well and form a dough.

4. Knead dough on a clean surface for 5 minutes and form a dough ball. Place the dough in a clean bowl, cover and set aside for 10 minutes. The dough will slightly rise.

5. Follow the same directions and prepare the light purple dough.

6. Brush some butter on the inside of a baking pan. Once the light purple dough is also proofed, separate each dough into 8-10 smaller round portions per dough.

7. Place each round in the pan, alternating between colors, leaving minimal space between each round, less than ¼ inch. Brush rolls with melted better.

8. Cover the pan and set aside for 1 hour, allowing the rolls to rise.

9. Preheat oven to 375 deg. F and bake for 25-30 minutes, until the tops are crispy. Allow dinner rolls to cool down to a safe temperature and serve warm.
