Quinoa Purple Sweet Potato Granola Bars

1 cup Suncore Foods® Quinoa Snow Flakes
2 1/2 cups old-fashioned rolled oats
1/4 cup Suncore Foods® Chia Seeds White
1/4 cup Suncore Foods® Hemp Seeds
1/2 cup chocolate chips (optional)
6 tbsp coconut oil
1/4 cup coconut sugar
3/4 cup honey
2 tbsp Suncore Foods® Purple Sweet Potato Supercolor Powder
1 cup chopped chocolate or chocolate chips
1. Prepare an 8" x 8" or 9" x 9" pan (or baking dish) with non-stick spray and parchment paper. In a large bowl, combine the quinoa, oats, chia seeds, hemp seeds, and chocolate chips; set aside.
2. In a small saucepan, add the coconut oil, coconut sugar, honey, and purple sweet potato powder. Place over medium heat and bring mixture to a boil, stirring occasionally. Let boil for 1 minute, and then immediately pour over the quinoa/oat mixture. Stir to combine. Firmly press the mixture into your prepared pan.
3. Melt the 1 cup of chocolate and evenly spread it over the top of your pressed bar. Allow bar to cool/set - you can place it in the refrigerator for a quicker set time.
4. Once your bar has set, use the parchment paper to lift it up and out of your baking pan. Slice into smaller bars and enjoy! Store leftovers in an airtight container at room temperature.
