Pink Pitaya Panna Cotta Shots

Shots! Shots! Shots! Truly adorable, these Pink Pitaya Panna Cotta Shots are so silky smooth and delicious that you'll go back for more and ask for a double. With average everyday pantry items, they are super simple and easy to make, so it's hard to resist whipping them up constantly! With Suncore Foods® Pink Pitaya Powder, they take on a lovely pink hue and speckles from the seeds of red dragon fruit, accentuated by a garnish of Suncore Foods® Cacao Nibs that add a wonderful texture and complementary chocolatey flavor. Ingredients

Pink Pitaya Panna Cotta:
1 cup + ½ cup unsweetened vanilla oat milk
1 cup coconut cream
1 tsp pure vanilla extract
½ cup maple syrup
1-2 tbsp Suncore Foods® Pink Pitaya Powder
4.5 tbsp cornstarch

Garnish: 
Suncore Foods® Cacao Nibs

Directions

1. Blending together 1 cup vanilla oat milk, coconut cream, vanilla extract, maple syrup and Suncore Foods® Pink Pitaya Powder until well combined. Transfer mixture to a saucepan.

2. Dissolve cornstarch into ½ cup of milk and mix into to the saucepan. Place saucepan on medium-high heat and bring to boil.

3. Reduce heat to medium-low and continue to cook for 2-5 minutes until the mixture starts to thicken.

4. Remove from heat and pour mixture into 8-10 shot glasses. Refrigerate for minimum 1 hour up to overnight. Garnish panna cotta with Suncore Foods® Cacao Nibs when ready to serve (optional).
