Pink Pitaya Panna Cotta:
1 cup + ½ cup unsweetened vanilla oat milk
1 cup coconut cream
1 tsp pure vanilla extract
½ cup maple syrup
1-2 tbsp Suncore Foods® Pink Pitaya Powder
4.5 tbsp cornstarch
Garnish:
Suncore Foods® Cacao Nibs

1. Blending together 1 cup vanilla oat milk, coconut cream, vanilla extract, maple syrup and Suncore Foods® Pink Pitaya Powder until well combined. Transfer mixture to a saucepan. 2. Dissolve cornstarch into ½ cup of milk and mix into to the saucepan. Place saucepan on medium-high heat and bring to boil. 3. Reduce heat to medium-low and continue to cook for 2-5 minutes until the mixture starts to thicken. 4. Remove from heat and pour mixture into 8-10 shot glasses. Refrigerate for minimum 1 hour up to overnight. Garnish panna cotta with Suncore Foods® Cacao Nibs when ready to serve (optional). [/directions]
