Midori Jade Matcha Oreos

Calling all chocolate and matcha lovers! This combo is a match-a made in heaven. Vegan Matcha Oreos with velvety matcha filling sandwiched between crisp and chocolatey oreos. You definitely will need more than one to be satisfied.

1 cup gluten-free flour or regular flour 
1/3 cup cacao powder
1/4 cup coconut sugar 
1/3 cup coconut oil
1 tsp vanilla bean extract

Matcha Cream Filling: 
1/4 cup vegan margarine, cold
1 cup powdered sugar
1/2 tbsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder 
1 tbsp coconut milk 
1 tsp vanilla extract
pinch of salt (or Suncore Foods® Rose Salt)


1. Preheat your oven to 175 celsius.
In a small bowl, combine the flour, sugar, cacao powder, coconut oil, and vanilla and mix until well combined. Cover the bowl and refrigerate for 10 minutes.

2.Roll out the dough. Use a circle cookie cutter, cut out the cookies until you’ve used all the dough. Lay cookies on prepared baking sheets and bake for approximately 15 minutes. Let cool completely before assembling

Matcha Cream Filling:

1. Beat together the sugar, margarine, matcha, salt, and vanilla. The mixture will seem very dry at first, but will eventually begin to clump together. Add coconut milk. beating until smooth.

2. Pipe the matcha cream filling on the bottoms of half of the cookies; top with remaining cookies. Enjoy!
