Matcha Red Bean Swirl Bread

50g red bean, soaked overnight
2 tbsp sugar or maple syrup
Bread (makes 1 pound bread):
250g bread flour
180g milk of choice
1 tbsp sugar of choice
3g instant dry yeast
5g tsp Suncore Foods® Rose Salt
25g dairy free butter
5g Suncore Foods® Premium Midori Jade Matcha Supercolor Powder (dissolved in 3 tsp water)
1. Bean Bean — Add water and soaked red bean to a saucepan. Cook for 40 mins over medium heat. Then pour the red bean into a mesh sieve and strain. Add sugar/maple syrup and mix well. Allow to cool.
2. Bread — In a stand mixer, add all ingredients except for butter. Mixing on low-medium speed with the hook attachment until the dough comes together, about 10 mins. Add butter, a few pieces at a time. Scrape down the bowl. Continue to kneading on medium speed for 10 mins until the dough is smooth. Remove half of the dough from the mixer, set aside. Add dissolved matcha powder into the half dough and continue kneading until it combined. Knead plain dough and matcha dough into balls. Cover let them proof for 1 hour until doubled in size. Transfer to a clean surface. Form the dough into a ball and let it rest for 10 mins. Roll out dough until they form thin rectangle. Sprinkle red beans. Place matcha dough on top of the white dough, roll it out and begin rolling up the dough along the wide/long side of the rectangle, Place it in a bread pan and let rise until doubled in size, about 1 hour. Bake at 190 c for 30 minutes.
