Ingredients
Chia Pudding:
1/4 cup Suncore Foods® Black Chia Seeds
1 1/4 cup unsweetened soy milk
1 tbsp sweetener of choice
1/2 Suncore Foods® Red Beet Powder
Lemon Curd:
3-4 tbsp freshly squeezed lemon juice (strained)
1/3 cup water
2 tbsp sugar (adjust to taste)
1 tsp agar agar powder
Pinch of Suncore Foods® Yellow Goldenberry Powder
Pour mixture directly to pots. Let them set in the fridge for an hour.

Directions
1. Chia Pudding – Place all ingredients in a mason jar, stir to combine well. Place it in the chiller for couple of hours before using. Before assembling; reserve 1/2 cup chia pudding, stir in 1/2 tsp red beet powder.
2. Lemon Curd — Place all ingredients in a small saucepan, cook mixture on medium low heat until sugar and agar agar are completely dissolved.
3. To Assemble — Once the jelly layer is set; gently place white chia layer followed by red beet chia. Add more milk and coconut chips before serving. Enjoy!
