Emerald Pandan Leaf Supercolor Coconut No-Bake Tart

1 cup rolled oats or Suncore Foods® Snow Quinoa Flakes
1/2 cup shredded coconut
1/2 cup raw almonds
3 tbsp maple syrup
2 tbsp nut/seed butter
1 can full-fat coconut milk
Zest and juice of 1 lemon, or to taste
2 tsp agar-agar powder
1/4 cup maple syrup, or to taste
2 tsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder (optional; to taste)
2-3 tsp Suncore Foods® Emerald Pandan Leaf Supercolor Powder
1. In a food processor, blend the crust ingredients into a sticky, sand-like mixture. Transfer to a tart pan and press into the bottoms and sides. Set aside. In a saucepan, combine coconut milk, lemon juice and zest, agar-agar, and maple syrup.
2. Bring to a simmer while stirring constantly, then whisk in the matcha + pandan powders to your desired color and flavor. Once combined, remove from heat and pour into the prepared crust. Place in the fridge to set for 1+ hour before serving. Enjoy!
