Colorful Kuih Kapit
Colorful Kuih Kapit made happily using Suncore Foods® Blue Butterfly Pea, Cosmos Red Cabbage, Emerald Pandan Leaf, Purple Sweet Potato Powders, or love letter biscuits, are ultra-crispy treats that bring people together, especially during Chinese New Year. Made by pouring a thin batter between iron plates and baking over an open flame, they are folded while hot and cooled for a signature crispiness. Ingredients
Colorful Kuih Kapit:
1 large egg
80g granulated sugar
110g tapioca starch
3g rice flour
¼ tsp salt
200 ml coconut milk
1 tbsp black sesame seeds (optional)
¼ tsp Suncore Foods® Blue Butterfly Pea Powder
¼ tsp Suncore Foods® Cosmos Red Cabbage Powder
¼ tsp Suncore Foods® Emerald Pandan Leaf Powder
¼ tsp Suncore Foods® Purple Sweet Potato Powder

Waffle cone maker
Krumkake iron
Electric Krumkake baker
Directions
1. In a large mixing bowl, combine the eggs and sugar. Whisk the mixture until the sugar has dissolved.
2. In a separate bowl, mix together the tapioca starch, rice flour, and salt. Whisk these dry ingredients to ensure they are well combined.
3. Pour the egg and sugar mixture into the bowl with the dry ingredients. Add the coconut milk and stir until you achieve a smooth batter. If desired, incorporate black sesame seeds and mix until evenly distributed.
4. Divide the batter into three equal portions and add Suncore Foods® Powders to each portion.
5. Preheat your waffle cone maker, krumkake iron, or krumkake baker; preheat it over medium heat for about one minute on each side. Then, lower the heat to low.
6. Spoon about 3/4 teaspoon to nearly 1 tablespoon of the batter onto the waffle cone maker. Gently close the lid to prevent splattering. Cook the batter for about 10 seconds on one side, then flip it over and cook for another 10 seconds. Repeat this process, flipping the batter two more times for another 10 seconds each time. In total, you will flip it four times.
7. When you open the maker to check the progress, the waffle should be lightly golden brown. If it appears pale and sticky, cook it for a few more seconds before checking again.
8. Keep in mind that this method serves as a guideline; the number of flips may vary depending on the mold you are using. If you are using an electric krumkake baker, flipping may not be necessary.
9. Continue with the remaining batter, remembering to stir the batter before scooping each time. Enjoy your delicious treats!
