Blue-tiful Glazed Pistachio Donuts

We donut know what we'd do without these Blue-tiful Glazed Pistachio Donuts! These delicious crumbly donuts with the dreamiest blue glaze will kiss our blue away. No donuts are complete without glaze, made with Suncore Foods® Blue Butterfly Pea & Aqua Blue Spirulina Supercolor Powders, you can achieve this aesthetically pleasing look. Ingredients

Makes 8 Donuts:
155g gluten-free 1-to-1 flour
80g powdered sugar
4g (1 tsp) baking powder
1g (¼ tsp) baking soda
10g corn starch
136g unsweetened vanilla oat milk
5g apple cider vinegar
45g dairy-free yogurt
5g pure vanilla extract
13g dairy-free melted butter

Glaze:
40g salted pistachios
175g white chocolate
½ tsp Suncore Foods® Blue Butterfly Pea Supercolor Powder
¼ tsp Suncore Foods® Aqua Blue Spirulina Supercolor Powder


Directions

1. Donuts — Preheat oven to 350º F and prepare a donut tray by brushing some butter on the inside of the donut cavities. In a large bowl, combine flour, sugar, baking powder and baking soda. In another bowl, dissolve cornstarch into oat milk and mix until frothy. Mix in remaining ingredients until well combined. Add wet ingredients to the bowl of dry ingredients and mix well forming a batter. Spoon or pipe the batter into donut molds, filling each mold to approximately two-thirds full. Over filling the batter will make the donuts overflow and disfigured on one side, though they will still taste great! Bake for 16 minutes and allow donuts to cool completely before adding the glaze.

2. Glaze – Crush pistachios and set aside. Using your preferred method, temper white chocolate. Sift in Supercolor Powders until well combined. While the chocolate is warm, dip each donut into the glaze, covering the top half of the donuts and place glazed donuts on a flat surface. Before the glaze solidifies, sprinkle crushed pistachios on half of each donut. As the donuts cool and the glaze solidifies, the pistachios will set into the glaze. Allow donuts to cool completely before serving.
