Blue Spirulina Chocolate Covered Berry Popsicles
This is the type of summer blues we can get down with! Put the “pop” in popsicle by adding Suncore Foods® Aqua Blue Spirulina Supercolor Powder to create a magical blue color and depth of flavor and a touch Suncore Foods® Fine Rose Salt to balance everything out! With a satisfying crunch into sweet white chocolate, a smoothness from creamy coconut ice cream, and a gooey burst of tangy sweetness from a berry filling, these vegan Blue Spirulina Chocolate Covered Berry Popsicles are an absolutely amazing summertime treat with a complex trio of textures and flavor combinations that are irresistible!
2 cup dairy free white chocolate
2 tbsp Suncore Foods® Aqua Blue Spirulina Supercolor Powder
1 cup mixed berries
1/3 cup water
2 tbsp sugar of choice
Coconut Ice Cream
1 can 400ml coconut milk *solid cream
1/3 cup condensed coconut milk
2 tsp vanilla extract
1/4 tsp Suncore Foods® Rose Salt
1. Chocolate Coating — Combine melted white chocolate and blue spirulina powder. Stir until powder dissolved. Add chocolate into popsicle mold and swirl it around so that the mold is coated. Refrigerate until set.
2. Berry Filling — Add the berries, water & sugar into a saucepan, cook on a medium heat. Mash the berries as they begin to heat up. Continue cooking until mixture reaches to a saucy consistency. Remove from the heat. Allow to cool completely.
3. Coconut Ice Cream — in a blender add ice cream ingredients and blend until smooth and creamy.
4. Assembly — Fill chocolate coated mold with the coconut ice cream, about 1/3 full. Then add the berry filling in the middle. Insert the ice cream sticks and cover with coconut ice cream. Freeze until solid, seal the mould with more chocolate. Place the mold back to the freezer for at least 2 hours before serving.
