Aqua Blue Spirulina Chocolate Coating:
2 cup dairy free white chocolate
2 tbsp Suncore Foods® Aqua Blue Spirulina Powder

Berry Filling:
1 cup mixed berries
1/3 cup water
2 tbsp sugar of choice

Coconut Ice Cream
1 can 400ml coconut milk *solid cream
1/3 cup condensed coconut milk
2 tsp vanilla extract
1/4 tsp salt

1. Aqua Blue Spirulina Chocolate Coating — Combine melted white chocolate and Suncore Foods® Aqua Blue Spirulina Powder. Stir until powder dissolved. Add chocolate into popsicle mold and swirl it around so that the mold is coated. Refrigerate until set.

2. Berry Filling — Add the berries, water & sugar into a saucepan, cook on a medium heat. Mash the berries as they begin to heat up. Continue cooking until mixture reaches to a saucy consistency. Remove from the heat. Allow to cool completely.

3. Coconut Ice Cream — in a blender add ice cream ingredients and blend until smooth and creamy. ⁣

4. Assembly — Fill chocolate coated mold with the coconut ice cream, about 1/3 full. Then add the berry filling in the middle. Insert the ice cream sticks and cover with coconut ice cream. Freeze until solid, seal the mould with more chocolate. Place the mold back to the freezer for at least 2 hours before serving.
