Fragrant coconut rice cooked with our supercolor powders (1/2 tsp Suncore Foods® Blue Butterfly Pea Supercolor Powder & 1/4 tsp Suncore Foods® Emerald Pandan Leaf Supercolor Powder) and served with crispy tofu strips, sliced cucumber, peanuts and vegan sambal. This dish is packed with delicate flavors and soft textures and easy to put together! Truly & utterly delicious for the eyes and stomach.
1 cup dry long grain rice
3/4 cup water
1/2 cup coconut milk
1/2 tsp Suncore Foods® Blue Butterfly Pea Supercolor Powder
1/4 tsp Suncore Foods® Emerald Pandan Leaf Supercolor Powder
1/8 tsp Suncore Foods® Rose Salt
1. Wash the rice 2 to 3 times through running water. Place the rice in a rice cooker.
2. Add in the water, coconut milk, butterfly pea powder, pandan powder, and salt. Give everything a good mix and set to cook.
3. Served with crispy tofu strips (pan-fried extra firm tofu seasoned with some vegan fish sauce and dark soy sauce), sliced cucumber, peanuts, and vegan sambal.
