Aqua Blue Spirulina Tier Cake

Ingredients

Cake:
2 cups cake flour
1.5 cups granulated sugar
2 tsp baking powder
2 tsp vanilla extract
1 tsp lemon extract
1/2 tsp salt
6 egg yolks (room temperature)
6 egg whites (room temperature)
2/3 cup olive oil
3/4 cup whole milk (room temperature)
1/2 tsp cream of tartar

Buttercream:
4 sticks unsalted butter (softened to room temperature)
2 lb confectioners sugar
2 tbsp heavy cream
A generous pinch of salt
1 tsp Suncore Foods® Aqua Blue Spirulina Powder


Directions

1. To begin, preheat your oven to 350F and lightly grease two 8-inch cake pans. Next, separate the eggs, and in a mixing bowl, combine the flour, sugar, baking powder (1 cup), and salt. In a separate bowl, whisk together the egg yolks, milk, vanilla extract, lemon extract, and olive oil. Pour the wet mixture into the dry ingredients and mix well. In another clean bowl, whip the egg whites and cream of tartar until frothy, and then add the remaining sugar. Beat until stiff peaks form, and then fold the meringue into the wet batter in three batches. Be careful not to over-mix. Spoon the batter into the prepared pans and bake for 20-30 minutes until done. You can check if it's done by inserting a toothpick into the cake and seeing if it comes out clean. Once the cake is finished, run a blade around the edge of the pan and invert it to remove the cake. Place it onto a wire rack to cool completely.

2. For the aqua blue spirulina frosting, start by beating the butter for two minutes. Then, add the other ingredients listed under buttercream and beat for another 1-2 minutes until the mixture is fluffy. Finally, frost the cake as desired.
