Apple Quinoa Muffins

Apple picking in the fall is one of our favorite past-times. It's a joyous activity that can get the entire family involved and brings the best of nostalgia. And to enjoy the fruits of your labor? Make some Apple Quinoa Muffins! Packed with fresh apples, sour cream, cinnamon, and everything nice, these super soft and aromatic muffins are incredibly simple to make and can be done in under a half hour and can be easily adjusted to suit your needs! With Suncore Foods® Snow Quinoa Flakes, these muffins are much more delicious & fun to fuel your day and to carry on with a little less guilt! What's special is that these quinoa flakes are aired and pressed, which make them very similar to oats. So, let's get these muffins ready to pop in the oven because what is fall without the warm and spicy aroma of apples and cinnamon?

Ingredients

Muffins:
2 cups all-purpose flour
3/4 cup Suncore Foods® Snow Quinoa Flakes
3 tsp baking powder
1/2 tsp baking soda
1 tbsp cinnamon powder
1 tbsp vanilla extract
1/2 cup sour cream (room temperature)
1/2 cup milk, room temperature
1/2 cup granulated sugar
1/2 cup dark brown sugar
1/3 cup vegetable oil/olive oil/ avocado oil
6 tbsp unsalted butter, softened
2 large egg, room temperature
1/4 tsp salt
2 cups peeled and chopped apples

Cinnamon Butter:
1 cup unsalted butter, softened
1/4 cup honey
1 cup powdered sugar
1 tbsp cinnamon powder
1/4 tsp salt

Directions

1. Preheat the oven to 375 F.

2. Line the muffin pan.

3. In a bowl whisk together all the dry ingredients ( flour, Suncore Foods® Snow Quinoa Flakes, salt, baking powder, baking soda and cinnamon).

4. In a bowl of a stand mixer fitted with a paddle attachment cream together the butter and both the sugars until light and fluffy for 2-3 mins.

5. Add the eggs and beat well. Add the vanilla extract and sour cream and beat well till it’s all well mixed.

6. With the mixer on low, add half of the flour and mix well. Next add all the milk at one and give it a good mix. Now add the remaining flour and mix until just combined. Remove the bowl from the stand mixer and add the chopped apples and mix well.

7. Scoop the batter and fill all the muffin cups 3/4th to full of the batter. Bake in the preheated oven for 15- 20 mins till done.

8. Beat all the ingredients listed under cinnamon butter until fluffy and smooth.

9. Spread cinnamon butter on the muffin and enjoy.
