Almost Raw Rainbow Slices
Who doesn't want to eat rainbows?? These Almost Raw Rainbow Slices have us grabbing for more than we can hold in our mouths! Sasha @earthlingsasha added Suncore Foods® Red Beet, Blue Butterfly Pea, and Premium Midori Jade Matcha Supercolor Powders for these gorgeous rainbow layers. And look at that yummy chocolate drizzle!

3/4 cup roasted almonds
1/3 cup medijool dates, soaked
Pinch of Suncore Foods® Rose Salt
1 1/2 cup raw cashews, soaked for 2+ hrs
1 cup plant milk
1/2 cup coconut oil
1/2 cup maple syrup
1/4 cup coconut butter, melted
1 tsp vanilla extract
1 tbsp Suncore Foods® Butterfly Pea Flowers Superblooms soaked in water
1/2 tbsp Suncore Foods® Red Beet Supercolor Powder
1/4 tbsp Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
1. Begin by blending the base in a blender - the almonds, dates and salt until chunky but not too smooth. Evenly distribute it and press down on the bottom of your container/mold as the base. Place in the freezer while you make the filling.
2. Blend the fillings until nice and smooth. Divide into 3 bowls and to one bowl, add the beetroot powder, another with matcha powder and another with the butterfly pea powder infused water. Mix. Begin by layering the green layer first, freezing for 5-10 minutes, before adding on the blue layer, then the red layer. Enjoy!
