Passion Fruit & Mango Chia Jelly Parfait

Nothing can compare to this "parfait" dessert. It's tasty and easy to make! Did we mention it also looks five-start restaurant-worthy? This passion fruit & mango chia jelly parfait is simply perfection, packed with layers and layers of deliciousness. Get your spoons and dig in to find a yummy, golden layer of passion fruit & mango chia pudding made with Suncore Foods® Sparkly Amber Passion Fruit Supercolor Flakes and Marigold Passion Fruit Supercolor Powder, followed by a white chia pudding layer made with Suncore Foods® Black Chia Seeds, then sweet mango jelly, and finally a classic coconut jelly! The perfect parfait is only for the perfect you.

 

Ingredients

Makes 3-4 Small Parfaits

Passion Fruit & Mango Chia Pudding:
1/2 fresh mango (diced)
2 tbsp Suncore Foods® Sparkly Amber Passion Fruit Supercolor Flakes
2 tbsp Suncore Foods® Marigold Passion Fruit Supercolor Powder & Seeds
1 1/2 cup water
1/4 cup Suncore Foods® Organic Black Chia Seeds
Sweetener of choice

White Chia Pudding:
1 1/4 cup soy milk
1/4 cup Suncore Foods® Organic White Chia Seeds
1-2 tbsp sweetener of choice

Mango Jelly Layer:
1/2 fresh mango
1 1/2 cup water
2 tbsp Suncore Foods® Sparkly Amber Passion Fruit Supercolor Flakes
2 tbsp Suncore Foods® Marigold Passion Fruit Supercolor Powder & Seeds
2 tbsp sugar
1 1/2 tsp agar agar powder

Coconut Jelly Layer:
1 cup coconut milk
1/2 tsp Suncore Foods® Rose Salt
1/2 tsp sugar
1/2 tsp agar agar powder

 

Directions

1. Passion Fruit & Mango Chia Pudding — Blend mango, passion fruit flakes and water until very smooth. You should be able to get about 350 ml juice.
Place 1/4 cup chia seed in a large mason jar along with juice; stir to combine well (add sweetener if needed).

2. Let the chia seed expand in the chiller for couple of hours.

3. White Chia Pudding — Place all ingredients in a mason jar, stir to combine well. Place it in the chiller for couple of hours until chia seeds expand.

4. Mango Jelly Layer — Blend mango, water, and passion fruit flakes until smooth. Transfer mixture to saucepan then add in agar agar and sugar. Cook mixture on medium low heat until sugar and agar agar have completely dissolved. Bring mixture to a boil for 1 minute. Remove pan from the heat. Divide mixture equally to prepared jars. Let them set in the chiller for 10 minutes before making the next layer.

5. Coconut Jelly Layer — Place all ingredients in a small saucepan. Cook mixture on low heat until agar agar and sugar are completely dissolved. Bring the mixture to a boil for 1 minute. Remove from heat (make sure to stir constantly). Pour mixture directly over mango jelly layer. Let them set in the chiller for 10-15 minutes before assembling with chia pudding. Enjoy!
