Mini Blueberry Pie with Blueberry Chia Jam

A snowflake is winter's version of a butterfly! These fantastic Mini Blueberry Pie with Blueberry Chia Jam will give you all the wonderful snowflakes & butterflies. Filled with earthy goodness, Suncore Foods® Black Chia Seeds, and fresh blueberries these treats are incredibly delicious and guilt-free. We only have eyes for these beauties! It was love at first bite!

Ingredients

Crust:
2 1/2 cups flour
2 tbsp coconut sugar
220g dairy free butter or margarine (cold & cut into small cubes)
1-2 tbsp ice water
1 tsp salt

Blueberry Chia Jam:
2 cups fresh blueberries
3 tbsp Suncore Foods® Black Chia Seeds
2 tbsp sugar of choice
2 tbsp lemon juice or water

Directions

1. Crust — Preheat oven to 180c. In a food processor, combine flour, sugar, cinnamon, salt and pulse until combined. Then slowly add the butter, pulsing until you get a coarse meal. Then slowly add the ice water and pulse until a dough ball forms. Flatten dough into disks, wrap in wax paper and pop in the fridge for at least 10-15 minutes. Roll out the dough and cut dough using a cookie cutter, transfer and fit into mini pie tin. Brush pie with coconut oil. Bake for 2-25 minutes until evenly browned. Allow it to cool completely.

2. Raspberry Chia Jam — Place the berries, sugar and lemon juice into a saucepan over a medium heat. Mash the raspberries as they begin to heat up. When the berries have broken down to a saucy consistency. Remove from the heat and allow the mixture to cool a little before adding the chia seeds. Transfer the jam to a jar and allow it to cool completely. Once the jam has reached room temperature transfer it to the fridge for an hour to set.
