Matcha Chocolate Cookies

Ingredients
Cookie Dough:
45g dairy free butter
75g all purpose flour
40g powdered sugar
10g almond flour
15g cornstarch
9g cocoa powder
1 tsp vanilla extract
1/4 tsp Suncore Foods® Rose Salt
1-2 tbsp milk of choice *cold
Matcha Chocolate:
200g your choice of chocolate
5g Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
Directions
1. Combine tempered chocolate with matcha powder, mix until smooth. Fill the mould with chocolate. Tap the mould to eliminate air bubbles. Scrape the mould with a scraper. *Ensure the top surface of the mold is scraped clean.
Allow to set at room temperature for 15 mins and then place in the fridge for 20 mins. Unmould and set aside.
2. Preheat oven to 180c. In a food processor, add cookie ingredients pulse until a dough ball forms. Refrigerate the dough for at least 10 minutes. Roll out the chilled dough, cut the cookies using a cookie cutter. Place the foil on the bear cookie. Lift up each arm and press it around the foil to look like the bear is hugging the foil. Place cookies to the freezer for 10 mins. Bake at 180 c for 10 minutes. Remove the foil, back to the oven and continue baking for 5 mins. Allow to cool completely.
