Lilac Taro Yam Dinner Rolls

Ingredients

Lilac Taro Yam Dough:
250g bread flour
1/2 tsp salt
2 tbsp sugar
1 tsp dry yeast
80g mashed potato
2 1/2 tbsp melted butter
155ml plant milk
2 tsp Sunncore Foods® Lilac Taro Yam Powder

Topping:
1/2 cup water
1 1/2 tbsp Sunncore Foods® Lilac Taro Yam Powder
2 tbsp sugar

Egg Wash:
2 tbsp plant milk
Pinch of turmeric (optional)

Directions

1. Boil 2 potatoes until soft and mash them.
2. Place all the dough ingredients into a mixing bowl.
3. Knead the dough until smooth and elastic. Cover the dough and let it rise in a warm place for about 1 hour or until it doubles in size.
4. After 1 hour, punch the air out of the dough or knead it for 30 seconds to remove any air bubbles.
5. Divide the dough into 9 even pieces. Roll each piece into a round ball and place them onto an oiled baking sheet.
6. Cover and let the dough rest for another hour.
7. Meanwhile, make the toppings by adding all the topping ingredients into a small saucepan. Mix until the sugar is dissolved and cook over low heat until the mixture thickens.
8. Once the custard is cooled to room temperature, transfer the mixture into a piping bag and set aside.
9. Right before baking, gently brush a thin layer of plant milk onto the top of the dough.
10. Pipe the cream onto the dough surface in a cross pattern.
11. Bake for 20-25 minutes at 180°C or until golden brown.
12. Remove buns from the tray and let them cool to room temperature. Enjoy!
