Lemonade with Jasmine Rose Petals Jelly and Butterfly Pea Ice Cubes

With this refreshingly sweet, tangy, fun-loving Lemonade with Jasmine & Rose Petals Jelly and Butterfly Pea Ice Cubes, you are set to start your week deliciously! You are going to adore this unicorn drink made with Suncore Foods® Butterfly Pea Flowers, Jasmine Flowers, and Rose Petals! Not only is it easy to make, but it also looks charmingly inviting, making it the perfect pick-me-up drink to start the week.

Ingredients

Serves 3-4

Butterfly Pea Ice Cubes:
3 tbsp Suncore Foods® Butterfly Pea Flowers
3-4 cups hot water

Rose Jelly:
½ cup Suncore Foods® Rose Petals
1¼ + ¼ cup hot water
¼ tsp Suncore Foods® Red Beet Powder
1½ tbs granulated sugar
½ tsp agar agar powder

Jasmine Lemonade:
3 tbsp Suncore Foods® Jasmine Flowers
3 cups hot water
Juice of 1 lemon
2-3 tbs simple syrup

Directions

1. Butterfly Pea Ice Cubes — Steep Suncore Foods® Butterfly Pea Flowers in hot water for 15 minutes. Strain the butterfly pea tea and discard the flowers. Pour into ice trays or molds of choice and freeze overnight.

2. Rose Jelly — Steep Suncore Foods® Rose Petals in 1¼ cup hot water for 30 minutes. The longer you steep the flowers the stronger the rose flavor will be. Strain the rose tea and discard flowers. Dissolve Suncore Foods® Red Beet Powder in ¼ cup hot water and combine the solution with the rose tea. Transfer mixture to a saucepan and mix in sugar and agar and agar powder until well combined. Bring mixture to boil and continue boiling for 1 minute. Reduce heat to medium and continue to cook for 2 minutes. Transfer mixture into a container and refrigerate for minimum 2 hours up to overnight. When ready to serve, cut jelly into small cubes.

3. Jasmine Lemonade — Steep Suncore Foods® Jasmine Flowers in hot water for 20 minutes. The longer you steep the flowers the stronger the jasmine flavor will be. Strain the jasmine tea and discard flowers. Mix in lemon juice and simple syrup.

4. Assemble Lemonade — Add butterfly pea ice cubes to a glass. Next, add 2-4 tbsp of rose jelly. Pour Jasmine lemonade and top off with some more rose jelly. Optional: Garnish with a few Suncore Foods® Jasmine Flowers.
