Lemon Madeleines Coated with Blue Butterfly Pea & Spirulina Chocolate Coating

A perfect cross between cake and cookie, these zesty Lemon Madeleines Coated with Blue Butterfly Pea & Spirulina Chocolate Coating are fancy yet adorably eye-catching goodies. The hearty and soft texture of these madeleines are fantastic to dunk in soak up your favorite tea or coffee without losing most of it to the bottom of your cup. These appealing treats are great as a goody gift bag or as great centerpieces for special events too! The stunning blue color comes from our Suncore Foods® Powders - Aqua Blue Spirulina and Blue Butterfly Pea.


Lemon Madeleines — Dry Ingredients:
2 1/2 cup self-rising flour
1 cup icing sugar
1/4 cup corn starch
Pinch of salt
Zest of 1 lemon

Lemon Madeleines — Wet Ingredients:
2 cups milk of choice
2/3 cup melted butter
4-5 tbsp lemon juice
1/2 tsp almond extract

For Chocolate Coating:
200 grams white chocolate
1 tbsp olive oil
2 tsp Suncore Foods® Aqua Blue Spirulina Powder
2 tsp Suncore Foods® Blue Butterfly Pea Powder


1. To Make Lemon Madeleines — Place all dry ingredients in a large bowl; whisk to combine well, set aside. Place all wet ingredients in a separate bowl; mix until everything is incorporated. Pour wet mixture over dry mixture. Using a spatula, fold until everything comes together. Let the batter rest in the chiller for 2-3 hours before baking. Preheat oven to 180 degrees Celsius. Scoop batter to Madeleines pan (it should be almost all the way full for each madeleines) bake them in preheated oven for about 14 minutes or until the edges become golden brown. Repeat until the batter is used up.

2. To Make Blue Chocolate Coating — Place chocolate over double boiler. Once chocolate has melted; stir in all other ingredients. Mix until well incorporated. Drizzle chocolate on madeleine pan, place baked madeleine on chocolate, gently swirl to coat evenly. Once done; place the pan in the freezer for 1 minute. Remove the pan and gently tap in on the counter to release madeleines. Enjoy!
