Colorful Rainbow Pancakes

Brighten your week with these colorful rainbow pancakes made with Suncore Foods® Pancake & Waffle Supermixes — Heroic Blue made with our Aqua Blue Spirulina Supercolor Powder, Power Pink made with our Pink Pitaya Supercolor Powder, Ultra Violet made with our Purple Sweet Potato Supercolor Powder & housemade special blend, and Zen Midori made with our Premium Midori Jade Matcha Supercolor Powder. These rainbow stacks are a fun twist on traditional buttermilk pancakes. So light and fluffy! You can also make these in any color combination you like! Go ahead and whip up delicious pink, blue, purple and green pancakes, there's no doubt this festive stack will put a smile on your family's face in the morning.


Vanilla Power Pink Pancakes:
½ cup Suncore Foods® Powder Pink Pancake Supermix
½ cup vanilla oat milk
½ tsp pure vanilla extract

Coconut Heroic Blue Pancakes:
½ cup Suncore Foods® Heroic Blue Pancake Supermix
½ cup + 2 tbs plant-milk (or water)
1/3 cup Suncore Foods® Coconut Chips, pulsed to a coarse powder

Lemon Zen Midori Pancakes:
½ cup Suncore Foods® Zen Midori Pancake Supermix
½ cup plant-milk (or water)
¾ tsp lemon zest

Passion Fruit Cream Sauce:
½ cup coconut cream
1 tbs Suncore Foods® Marigold Passion Fruit Supercolor Powder & Seeds
¾ cup plant-milk
½ cup fresh mango



1. Pancakes — For each Pancake Supermix, combine all ingredients and continue to cook by following package instructions. When ready, assemble rainbow pancakes into a stack and serve hot with passion fruit cream sauce and/or maple syrup.

2. Passion Fruit Cream Sauce — Blend all ingredients until smooth and well combined. Add some more milk if you prefer the sauce to be thinner. Serve with pancakes.
