Coconut Cosmos Red Cabbage Agar Agar Layered Jelly Cake

Ingredients

Coconut Milk Layers:
400ml coconut milk
1/2 tsp salt
2 tsp agar agar powder

Colorful Layers:
150g sugar
400ml water
2 tsp agar agar powder
2 tsp Suncore Foods® Cosmos Red Cabbage Powder

Directions

1. In a saucepan whisk together the coconut milk layer ingredients. Bring to boil and then simmer over low heat (keep over low heat to prevent the liquids turn into solid).
2. In an another saucepan whisk together colored layers . Bring to a boil and then simmer over low heat (again ensure to keep over low heat to prevent the liquids turn into solid).
3. Pour the 1/4 cup coconut mixture into a square glass bowl. Allow this to set at room temperature. Check with your finger to see if the layer is set (the surface should feel slightly tacky). Once the coconut layer is set, slowly pour colored layer on top.
4. Repeat this process until you use up all the mixture.
5. Let the jelly set in the fridge for at least 2 hours. Remove the jelly from  the glass bowl and cut into small pieces and enjoy.
