Ingredients (5 inches square pan):
280g milk of choice
30g sugar of choice
2 tsp Suncore Foods® Butterfly Pea Flowers Superbloom
1. Add coconut milk & butterfly pea flowers to a saucepan, bring up to a boil. Remove from heat and let sit for 10 mins. Use a spoon to press the flowers against the bottom of the cup so they release more color. Discard the flowers once the color is vivid enough.
2. Add sugar, cornstarch into the butterfly pea flower mixture, cook on medium heat until thickened. Stirring constantly.
3. Gently pour mixture into the dish and refrigerate ( at least 4 hours or overnight) to set. Cut pudding into small squares and coat with shredded coconut.
