Butterfly Pea Flower Boba Milk Tea

Ingredients

Butterfly Pea Syrup: ⁣
1 tbsp Suncore Foods® Butterfly Pea Flowers ⁣
1/4 cup sugar of choice ⁣
1/4 cup hot water ⁣

Boba:⁣
90g tapioca starch ⁣
37g sugar of choice ⁣
60g water
1/8 to 1/2 tsp Suncore Foods® Blue Butterfly Pea Powder

To Serve:
Ice cubes
Unsweetened soy milk
Butterfly Pea Flower Tea made with Suncore Foods® Butterfly Pea Flowers

Directions

1. Syrup ⁣— Place the Suncore Foods® Butterfly Pea Flowers in a measuring cup, add boiling water and sugar. Let sit for 10 mins. Use a spoon to press the flowers against the bottom of the cup so they release more color. Discard the flowers once the color is vivid enough. ⁣

⁣2. Boba ⁣— Place tapioca starch and Suncore Foods® Blue Butterfly Pea Powder into a bowl. Set aside.⁣ Bring water and sugar to a boil. (Water must be hot or the mixture will not form). Add 1 tablespoon of the tapioca and butterfly pea powder mixture and stir until well combined and no lumps. Stir the hot mixture quickly into the tapioca butterfly pea mixture with a pair of chopsticks. Mix well. ⁣Transfer dough on a lightly tapioca floured surface, knead the dough until it becomes uniform, soft and elastic. Add more tapioca starch if needed.⁣ Roll out dough into a square shape. Cut into small cubes and roll each into a ball. Lightly dust balls with tapioca flour.⁣

⁣3. In a medium pot, boil enough water to cover the tapioca balls. Add the tapioca balls into the water. Stirring to prevent sticking. Let boil until tapioca balls float to the top. Reduce the heat to low, cover with lid and let simmer for 15 minutes. Turn off the heat, keep the lid on, let sit for 10 minutes. Drain the tapioca pearls, add 2 tablespoons of sugar to prevent sticking. Add them to your favorite milk tea or coffee and serve. ⁣
