Blue Butterfly Pea Spirulina Quinoa Fried Rice

A delicious swapping out from the goodness of traditional rice with delicious Suncore Foods® Rainbow Quinoa Seeds in this easy quinoa fried rice but is similarly colorful, amazingly flavorful, and only takes about 15 minutes to make. Game changer! The vibrant blue hue is from a combination of Suncore Foods® Aqua Blue Spirulina and Blue Butterfly Pea Powders. Every forkful is fully loaded with good stuff and surely be one everyone's favorite recipe to make.

Ingredients

Butterfly Pea Quinoa:
1 cup uncooked Suncore Foods® Rainbow Quinoa Seeds
2 cups water
1 tsp Suncore Foods® Blue Butterfly Pea Powder
1 tsp Suncore Foods® Aqua Blue Spirulina Powder

Fried Quinoa:
1 tbs sesame oil
10 garlic cloves
1/2 tsp chili flakes
1.5 tsp crushed fresh ginger (or 1 tsp ginger paste)
1.5 cups veggies of choice, finely chopped
2 tbs low sodium tamari (or soy sauce)
1/4 tsp paprika
1/2 tsp salt (or to taste)
Prepared Butterfly Pea Quinoa ⁣

Directions

1. Follow package instructions to cook the Suncore Foods® Rainbow Quinoa Seeds and before simmering, mix in Suncore Foods® Aqua Blue Spirulina Powder & Suncore Foods® Blue Butterfly Pea Powder.

2. Place a large frying pan or wok on medium heat. Once hot, add sesame oil and spread it around evenly. Add garlic and chili flakes and sauté until the garlic starts to turn brown.

3. Add ginger and vegetables and cook for 5-7 minutes until the veggies start to soften. Add tamari, paprika and salt and cook until the veggies are cooked through. Add butterfly pea quinoa, mix well and cook for 1-2 minutes until the quinoa absorbs any remaining tamari. Serve hot.
