Blood Orange Quinoa Cacao Nibs Chocolate Cake

Our OCD (Obsessive Cake Disorder) is getting out of control! This blood orange chocolate cake has our sweet tooth tingling. Grab your fork and dig in this soft, moist, and rich chocolate cake, with a hint of blood orange and distinct texture from Suncore Foods® Snow Quinoa Flakes altogether make this cake so heavenly delicious! We are here to serve the best of the best, using Suncore Foods® Cacao Nibs to make this dark rich chocolate cake. A cake is happiness in a tangible and edible form. Ingredients

Cake:
1 3/4 cups all-purpose flour
1/2 cup Suncore Foods® Snow Quinoa Flakes
2 1/4 cups granulated sugar
1 1/4 cups cocoa powder
2 tsp baking powder
1/4 tsp baking soda
1 cup water
1/2 cup freshly squeezed blood orange juice
2 tsp espresso powder
2 tsp vanilla extract
1 tsp salt
4 large eggs (room temperature)
1/4 cup Suncore Foods® Cacao Nibs
1 cup olive oil

Buttercream:
12 oz unsalted butter (softened to room temperature)
3 cups confectioners sugar
3-4 tbsp cacao powder
1/4 cup heavy cream
A generous pinch salt

 

Directions

1. Preheat oven to 350 F.

2. Line 3 6” baking pans with parchment paper.

3. Take all the ingredients in a large mixing bowl and beat all the ingredients except the Suncore Foods® Cacao Nibs, until it’s very well mixed using an electric mixer. Make sure to scrape the bottom while beating. Stir in the cacao nibs.

4. Divide the batter into the prepared pans and bake for 20-25 mins till done.

5. For the buttercream, beat the butter for 2 mins. Then add the other ingredients listed under buttercream and beat for 1 to 2 mins until fluffy. Frost as desired.
