Amethyst Acai Blackberry Ice Cream Pops

Ice cream pops:
2 cups blackberries
3 tbsp lemon juice
1 tbsp Suncore Foods® Organic Amethyst Acai Berry Supercolor Powder (dissolved in 2 tbsp water)
2 cans coconut whipping cream
1/2 cup condensed coconut milk
Suncore Foods® Amethyst Acai Berry Supercolor Powder and Suncore Foods® Ebony Carrot Supercolor Powder for the color.
1. Combine the lemon juice, and blackberries in a pan on the stove. Heat over medium heat until berries have softened and started to break down. Remove from stove and puree in a blender. Then pour into a mesh sieve and strain (optional). Allow to cool.
2. Pour the coconut whipping cream into a mixing bowl or the bowl of a stand mixer. Use a mixer to whip the cream until it holds stiff, about 3-5 minutes. Pour the sweetened condensed milk and blueberry mixture into whipping cream.
Pour the mixture into your ice cream maker and follow the manufacturer's directions. Transfer mixture to ice cream silicone mold and freeze overnight.
3. Combine melted white chocolate, Açai, purple carrot powder and coconut oil and stir until smooth. Dip the frozen ice cream in the chocolate. Place ice cream on a paper lined tray to set. Serve immediately. Store leftovers in an airtight container in the freezer.
