Yellow Goldenberry Lemon Meringue Tart
Calling all citrus lovers! Come together in this sweet and tart scrumptious dream using our Suncore Foods® Yellow Goldenberry Supercolor Powder combined with fresh lemons in this super smooth and pillowy soft curd filling of meringue, this dessert is an explosion of golden sweetness with citrus love. Impossible to resist and will be a new family favorite!
1 1/4 cups (150g) all purpose flour
1/4 cup (28g) almond meal *28g
1/4 cup (35g) powdered sugar
90g cold coconut oil or dairy free butter
1/2 tbsp (7g) cold almond milk
1 tsp vanilla extract
1/2 tsp Suncore Foods® Rose Salt
1/2 cup (120g) lemon juice
1/3 cup (65g) cane sugar
2 tbsp coconut cream
1 tbsp Suncore Foods® Yellow Goldenberry Supercolor Powder (dissolved in 1 tbsp water)
Suncore Foods® Turmeric Powder for color
Pinch of Suncore Foods® Rose Salt
1 tsp agar-agar
2 tbsp (16g) cornstarch (dissolved in 2 tbsp water)
1 tbsp coconut oil
1. Crust — Preheat oven to 180c. In a food processor, add crust ingredients pulse until a dough ball forms. Refrigerate the dough for at least 10 minutes. Roll out the chilled dough, then place gently into tart pan. Firmly press mixture into the tart pan with your hands, press into bottom and up the sides of tart pan. (Chill the dough if it gets too warm) Bake for 15 minutes or until crust is golden brown.
2. In a saucepan, combine the lemon juice, sugar, coconut cream, yellow goldenberry powder, turmeric and salt. Cook on a medium heat, with constant stirring for 1 minute. Add agar-agar and mix until completely dissolved. Whisk in cornstarch and coconut oil. Let simmer for 1 minute. Pour lemon mixture to a cooled tart shell and place in the fridge at least 4 hrs to set.
