Purple Sweet Potato Taro Yam Cookie Sandwiches

Ingredients
Cookies:
100g dairy free butter
15g condensed coconut milk
1 1/4 cups (150g) all purpose flour
50g powdered sugar
1/4 cup (32g) cornstarch
1 tsp vanilla extract
1/4 tsp salt
2 tsp Suncore Foods® Purple Sweet Potato Powder
2 tsp Suncore Foods® Lilac Taro Yam Powder
Filing:
1/4 cup vegan margarine, cold
1 cup powdered sugar
1 tbsp coconut milk
1 tsp vanilla extract
Directions
1. Cookies — In a large bowl cream together condensed coconut milk and butter. Add in flour, Suncore Foods® Purple Sweet Potato Powder, Suncore Foods® Lilac Taro Yam Powder, cornstarch, powdered sugar, vanilla. salt and mix until well combined. Wrap cookie dough with cling wrap and refrigerate for 20 mins.
2. Preheat oven to 170c. Lightly flour work surface and rolling pin. Roll dough out onto a piece of parchment paper to about 1/4-inch thickness and cut out the dough using a cookie cutter. Bake cookies for 10-12 minutes. Allow cookies to cool completely.
3. Filling — Beat together the sugar, margarine, salt and vanilla. The mixture will seem very dry at first, but will eventually begin to clump together. Add condensed coconut milk. beating until smooth.
4. Pipe the cream filling on the bottoms of half of the cookies; top with remaining cookies. Enjoy!
