Purple Sweet Potato Cheesecake Bars

Ingredients
Crust:
1 c rolled oats
1/2 c almonds
10 dates medijol
2 tbsp coconut oil, melted
Cheesecake:
1,5 c cashew soaked overnight
220 g coconut cream
4 tbsp agave syrup
2 tbsp Suncore Foods® Purple Sweet Potato Powder
1 tbsp coconut oil melted
Directions
1. Blend all ingredients for crush. Press the mixture into the bottom of the pan. Freeze 30 minutes.
2. Blend all ingredients for the cheesecake filling until smooth and creamy. Pour over the crust. Freeze for at least 3 hours. Enjoy!
