Pink Pitaya Glazed Goji Berry Rice Krispies

Say hello to your new favorite snack: Pink Pitaya Glazed Goji Berry Rice Krispies! With vibrant, natural Suncore Foods® Pink Pitaya Powder giving it that stunning magenta hue and plenty of goodness-rich goji berries mixed in, this treat is chewy, gooey, slightly sweet, and bursting with feel-good magic.
Goji Berry Rice Krispies:
1/2 cup salted butter
7 cups mini marshmallows, divided
6 cups rice cereal
1/2 cup Suncore Foods® Goji Berries, roughly chopped
1 tsp vanilla paste
Pink Pitaya Glaze:
1.5 cup powdered sugar
1 tbsp Suncore Foods® Pink Pitaya Powder
3 to 4 tbsp milk
1 tsp vanilla paste

1. Lightly butter a 9x9-inch pan, and line with parchment paper, leaving an overhang for easy removal.
2. In a large pot, and over medium-low heat, melt butter completely.
3. Add vanilla and 6 cups of mini marshmallows, and using a silicone spatula, stir until completely melted. Reserve 1 cup of marshmallows for later.4.
4. Once nearly melted, remove from the heat and mix in the rice cereal until evenly coated. Then, fold in the reserved mini marshmallows and chopped
Suncore Foods® Goji Berries.
5. Transfer the cereal mixture into your prepared pan. Use a butter wrapper, or greased silicone spatula, and evenly press it into the pan. Don't pack it down too firmly or the bars will be hard.
6. Make the glaze by whisking together powdered sugar,
Suncore Foods® Pink Pitaya Powder, milk and vanilla.
7. Drizzle it over the Rice Krispies and top with more chopped
Suncore Foods® Goji Berries. Let the treats set at room temperature for at least one hour. Once they're set, lift them out of the pan using the parchment sling and slice into squares. Enjoy!
