Peanut Butter Pitaya Overnight Oats

1 cup rolled oats
1 ½ cups nondairy milk of choice
2 tbsp coconut sugar
1 tbsp Suncore Foods® Pink Pitaya Supercolor Powder
1 tbsp peanut butter + more for topping
1 tsp vanilla extract
Pinch of salt (use Suncore Foods® Rose Salt for extra flavor)
Toppings: banana, blueberries, peanut butter, and peanuts
1. In a bowl, whisk together milk, coconut sugar, pitaya powder, peanut butter, vanilla, and salt. Stir in oats until well combined.
2. Pour into a jar and let thicken in the fridge for 4-8 hours, or preferably overnight.
3. When ready to eat, top with banana, berries & peanut butter.
