Pandan Leaf Pancakes with Blue Butterfly Pea Yogurt Sauce
As the days of the week are stacking up to the weekend, so are our plates! These Pandan Leaf Pancakes with Blue Butterfly Pea Yogurt Sauce give a colorful start to your day. It's just overflowing with goodness!
Ingredients
Make 12-15 Pancakes
Pancakes:
300mL almond milk
150mL soy yoghurt (or any other yogurt)
300g spelt flour
1.5 tbsp Suncore Foods® Emerald Pandan Leaf Powder
2 tsp baking powder
3 tbsp agave syrup
1 flax egg (or regular egg)
Toppings:
300 ml coconut yogurt
1 tsp Suncore Foods® Blue Butterfly Pea Powder
2 tbsp maple syrup
Summer fruits
Directions
1. In a large bowl, whisk together the all the pancakes ingredients. Whisk together until well combined and bake your pancakes 2 minutes per side.
2. For the toppings, combine the coconut yogurt and Suncore Foods® Blue Butterfly Pea Powder.
3. Lastly, enjoy!
