Ocean Aqua Blue Spirulina White Chocolate Madeleines

Get the taste of an easy, breezy tropical vacation with each bite of these Ocean Aqua Blue Spirulina White Chocolate Madeleines that will keep you coming back for more. Light as air little fluffy sponge cakes with a delicate buttery golden brown crispy edges that melt softly in your mouth. To dress these cakes up, these marvelous lovely Ocean Aqua Blue Spirulina White Chocolate Madeleines dipped in Suncore Foods® Aqua Blue Spirulina Powder to create the lovely vibrant aqua hue. Perfect accompaniment to a cup of iced tea or cold beverage, the effort to make is 100% worth! 


Dry Ingredients:
60g cake flour
15g almond meal
8g cornstarch
50g sugar of choice
1 tsp baking powder
1/8 tsp salt

Wet Ingredients:
50g yogurt
30g unsweetened soy milk
1 tbsp vanilla extract
75g dairy-free butter, melted
150g dairy-free white Chocolate
1/2 tsp Suncore Foods® Aqua Blue Spirulina Powder


1. In a large mixing bowl, combine all dry ingredients and set aside.
Whisk together wet ingredients. Then pour wet ingredients to dry. Gently mix until just combined. Refrigerate the batter for 1 hour or until batter is thicken.

2. Brush Madeleine pan with melted butter. Scoop about 1 tsp batter into mini moulds Bake at 170c preheated 10-12 minutes (mini pan) until edges begin to become a little golden. Allow Madeleines to cool slightly and transfer to a cooling rack to cool completely.

3. Combine melted chocolate, Suncore Foods® Aqua Blue Spirulina Powder, and mix well. Pipe small amount of chocolate into the pan, place Madeleine on the chocolate and place in freezer to set. About 15 mins.
