Mocha Chocolate Cacao Nibs Peanut Butter Cookies
Delicious and homemade Mocha Chocolate Cacao Nibs Peanut Butter Cookies!
¾ cup gluten-free flour
1 pack protein powder of choice
¼ cup coconut oil, solid (55g)
⅓ cup coconut sugar
1 tsp vanilla bean extract
2 tbsp espresso
2 tbsp peanut butter
½ tsp baking soda
¼ tsp salt
½ cup dark chocolate chips
1. Preheat oven to 180ºC.
2. In a large bowl, mix coconut oil, brown sugar, peanut butter, vanilla, espresso until smooth.
3. Combine the flour, protein powder, baking soda, and salt. Fold in chocolate chips.
4. Roll dough into balls and place onto a parchment lined baking tray. Aim for around 8 cookies from your batch.
5. Bake for 15-18 mins in the preheated oven. Allow cookies to cool for 2 mins on the cookie sheet before removing to wire racks to cool completely.
