Matcha & Chocolate Cookie Sandwiches

The only thing better than one cookie is two cookies! Make your day happy with these scrumptious Matcha & Chocolate Cookie sandwiches. These crisp, buttery cookies will slowly melt in your mouth and unveil a delicious dark chocolate filling. It's *chef kiss* delicious! Voila! Ingredients

Cookie:
240g flour
18g almond flour
70g cornstarch
120g powdered sugar
135g dairy free butter
45g milk of choice
1/2 tsp salt
1 tsp vanilla extract
10g Suncore Foods® Premium Midori Jade Matcha Supercolor Powder
15g cocoa powder

Filling:
160g dark chocolate
45g whipping cream

Directions

1. Cookie — In a stand mixer, cream the butter, powdered sugar, vanilla. Add in flour, almond flour, cornstarch, salt, mix for dough forms. Divine dough into 2, add matcha, cocoa powder to each dough and mix to combine. Cover dough with plastic wrap and chill in the fridge for 15 minutes.
Preheat oven to 180c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 15 mins. Allow cookies to cool completely.

2. Filling — Heat the whipping cream in a saucepan. Pour the hot cream over the chocolate, mix until smooth. Place plastic wrap over it so it is touching the surface of the ganache or place it directly into a disposable piping bag. Place ganache in the fridge until needed.
