Emerald Pandan Leaf Coconut Barfi
A super simple dessert made with just a handful of in under a half hour, barfi is THE treat for South Indian holidays and celebrations! There are many variations and different methods to barfi, but this Emerald Pandan Leaf Coconut Barfi is flavored with condensed milk and cardamom to achieve that perfect balance of sweetness. With a main ingredient of coconut, barfi is perfect to add some color like Suncore Foods® Emerald Pandan Leaf Supercolor Powder for that extra special touch. Chewy, coconut-y, and fudgy, these are highly addictive!
2 cups freshly grated or desiccated coconut (grate only the white part)
1/2 cup condensed milk
1/4 cup sugar
1 tsp vanilla extract
1 tbsp or cardamom powder
3 tbsp Suncore Foods® Emerald Pandan Leaf Supercolor Powder whisked with 1-2 tsp water
2 tbsp ghee or clarified butter
1. Grease a pan or plate with little ghee and set aside.
2. In a large pan preferably non-stick, add the grated coconut, condensed milk, and sugar. Keep it on low to medium flame and stir well. Keep stirring the mixture till it dries up for about 7- 10 mins. Now add the ghee, superfood mixture, and vanilla extract and cook for about five mins till the mixture forms together like a dough. You can test whether the mixture is ready by taking a small amount and forming a ball. If you can form a ball then you are ready to remove the mixture from the heat.
3. Transfer the mixture onto the greased plate and flatten the top with the spatula. Allow the barfi to set completely outside or in the refrigerator before slicing. Enjoy!
