Goldenberry Sunshine Mousse Tart

Ingredients

Crust:
12.3 oz flour
1.8 oz almond flour
6.3 oz unsalted butter
2.5 oz egg
Pinch of salt

Mousse Filling:
8 oz cream cheese
2 cups heavy cream
1/2 cup granulated sugar
3/4 cup confectioners sugar
1 packet gelatine
2 tbsp water
2 tsp Suncore Foods® Yellow Goldenberry Powder + 2 tbsp water
Berries for garnish

Directions

1. Place the flour, sugar, and salt in the bowl of a food processor, add butter, pulse until mixture resembles coarse meal. Add the eggs until the dough gathers itself into a ball. Wrap the dough tightly in plastic wrap and chill for 1 hour. On a lightly floured surface, roll the dough to a thickness of about 1/8-inch. Press the dough into the tart pan trimming away any excess. Bake for 20 minutes at 375'F. Cool completely.

2. Mix 2 tbsp of water with Suncore Foods® Yellow Goldenberry Powder until it completely dissolves. Dissolve gelatin in water. In a food processor combine the cream cheese, confectioner's sugar and mix until smooth.Add gelatin and mix. Whip the heavy cream to stiff peaks and fold into the cream cheese mixture.

3. Pour mousse into chilled tart. Refrigerate for at least 2-4 hours, or until completely set. Top with fresh berries.
