Aqua Blue Spirulina Meringue Cookies

Let's bake this deliciousness more often! Our minds are dreaming about these gorgeous Aqua Blue Spirulina Meringue Cookies. Sweet, buttery cookies and crips, melt-in-your-mouth meringue are just a batch made in heaven. Just one bite and you can't stop. Ingredients

 

Cookie:

180g all purpose flour
27g almond meal
3 tbsp maple syrup
110g dairy free butter cold & cut into small cube
1 tsp vanilla extract
pinch of pink salt



Meringue:
1/2 cup aquafaba
1 cup powdered sugar
1/4 tsp cream of tartar
Suncore Foods® Aqua Blue Spirurlina Supercolor Powder for the colour

Directions

1. Cookie : In a food processor, add cookie ingredients pulse until a dough ball forms. Cover dough with plastic wrap and chill in the fridge for 1 hour.
Preheat oven to 170c. Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Bake cookies for 12 mins. Allow cookies to cool completely.
 

2. Meringue: Preheat the oven to 100c. 
Clean bowl and whisker using kitchen towel with a little bit of vinegar. Place the aquafaba and cream of tartar into the bowl of an electric mixer.
Whisk for 5 mins until it’s double in size and foamy. Slowly add powdered sugar, one tablespoon at the time. whisking until the mixture forms stiff, glossy peaks (15 mins). Add blue spirurlina powder and whisk to combine. Transfer the meringue mixture into a icing bag with a star tip. Pipe onto the cooler cookies bake for 2 hrs. (Meringue might take a little longer to dry if they are bigger) Take them out of the oven, let them cool. Store in a dry place so they maintain their shape.
