- Its vivid cerise-magenta color comes from betalains — a unique class of pigments not found in most other plants.
- The prickly pear fruit is also known as tuna in Spanish-speaking countries and is enjoyed fresh, juiced, and in candies.
- Prickly pear is one of the few fruits that contains both betacyanins (red-purple) and betaxanthins (yellow-orange) pigments.
- The nopal cactus pads (nopales) are also edible and are a popular vegetable in Mexican cuisine.
